Shepherd's Pie

Shepherd's pie is a regular in my house.  I love any dish that involves mashed potatoes, my ultimate comfort food!  This flavorful dish is easy to make and is ready in under an hour.

Shepherd's Pie

4 large potatoes, peeled and cubed
1 tablespoon butter
1 tablespoon finely chopped onion
1/2 cup cheddar cheese, shredded and separated
salt & pepper
1 tablespoon extra virgin olive oil
1 1/2 cup frozen vegetables, thawed (such as carrots and peas, or peas and corn)
1 onion, chopped
1 pound ground beef
2 tablespoons flour
1 tablespoon ketchup
1 cup gravy (or 3 tablespoons gravy mix plus 1 cup water)
1/4 cup Worcestershire sauce

Place potatoes in medium to large pot.  Cover with water.   Bring to a boil and simmer for 20 minutes.  Drain and mash.
Add to the potatoes the butter, finely chopped onion (1 tablespoon), and half of the cheese (1/4 cup) plus salt and pepper to taste.
Meanwhile, preheat oven to 375 degrees F.  In a large skillet heat the oil.  Add onion and cook until transparent.  Add beef and cook until browned.  Drain excess liquid.
Stir in flour and cook for 1 minute.
Add ketchup, gravy and the Worcestershire sauce.  
Stir in thawed vegetables and simmer 5 minutes.
Spread in a 2 quart casserole dish.
Top with mashed potatoes and remaining cheese.
Bake at 375 degrees F for 20 minutes or until top is slightly browned.
