Honey-Glazed Chicken Stir-Fry

This was such a tasty stir-fry.  If you are sick of having stir-fry sauce out of a bottle, I would highly recommend this one!  The sauce is made from scratch and it tastes awesome! You can of course use a different variety of vegetables, this is just what sounded good to me.  Also, if you like a lot of sauce you may want to make 50% more sauce.  I made the amount listed below and thought it was just right, nice and light.
Here's what you'll need:


1 lb boneless, skinless chicken breasts, cut up ($1.99)
4 TBSP Honey ($1.19)
4 TBSP Vinegar ($0.20)
4 TBSP Orange Juice ($0.12)
8 tsp soy sauce ($0.25)
3 tsp cornstarch ($0.04)
3 TBSP olive oil ($0.33)
1 bunch fresh broccoli, cut up ($0.52)
1/2 red pepper, sliced ($0.85)
1/2 green pepper, sliced ($0.40)
6 oz frozen sugar peas ($1.10)
3 cups long grain white rice, dry ($1.20) 


Total Cost: $8.22 makes 4-6 servings


How to make it: 
1. Prepare rice according to package directions. Meanwhile, for the sauce, in a small bowl mix together the honey, vinegar, orange juice, soy sauce, and cornstarch: set aside.
2. Pour 2 TBSP of the oil into large skillet or wok.  Heat over medium-high heat.  Add your vegetables and cook until crisp-tender.  Remove vegetables from wok.  Add chicken to the wok with 1 TBSP oil and cook until chicken is no longer pink.  Push chicken to the outside of the wok and add the sauce.  Cook and stir until thickened and bubbly.  
3.  Return vegetable to the wok.  Cook and stir about 1 minute more or until heated through.  Serve over rice.
